Walnut Dill Dijon Crusted Salmon
Who doesn’t love a good salmon recipe and this one will be a staple on your table. The walnuts and the salmon are a nutrient dense duo packed with omega 3’s, vitamin A & D, antioxidants, all of which play a big role as well in fighting inflammation, promoting a healthy gut and reducing the risk of some cancers. It will also help balance your blood sugar and keep those gentle curves on your monitor.

Ingredients
Marinade
- 6 organic salmon fillets
- 1.5 tablespoons Dijon mustard
- 2 cloves garlic, crushed
- 1 to 2 tablespoons dill, minced
- 2 teaspoons lemon juice
- 1 teaspoon chili flakes
- ½ tsp honey
- Lemon zest from ½ lemon
- Salt & pepper
Crust
- 1.5 cups walnuts, processed
- ¼ cup to 1½ cup almond flour
- Mix together and season with salt & pepper
Garnish
- Chopped toasted walnuts
- Chopped dill
- Lemon wedges
Method
Place salmon filets in a glass pyrex, cover them in the marinade and let them rest for 1 to 2 hrs in the fridge.
When ready to cook, cover with almond flour and then crust with processed walnuts.
Bake at 200 C for 15 to 18 minutes until cooked through.
Garnish with chopped toasted walnuts and dill.
Enjoy with broccoli or garlic sautéed spinach.
