Kale Arugula Butternut Squash Salad

I’m gravitating towards all the foods that make fall so special, butternut
squash, caramelized pecans, dried cranberries, pumpkin spice & everything
nice.

This Kale Arugula butternut squash salad w/ vegan feta, roasted butternut
squash, black quinoa, caramelized pecans and dried cranberries in balsamic
honey dijon vinaigrette is the kinda lunch that makes me happy✨💚
Ingredients:
1 cup kale
1/2 cup arugula
1 cup butternut squash cubes, roasted
1/4 cup vega feta or goat feta
1/2 cup black quinoa
1/4 cup toasted pecans w/ a little organic brown sugar.
2 tbs dried cranberries or fresh pomegranates.

Dressing:
1/4 cup balsamic dressing
1 tbs Dijon mustard
1 tbs honey
1 cup olive oil
Salt & pepper

Directions:

  1. Prep your ingredients and then combine nicely in a bowl.
  2. Whisk dressing ingredients, adjust taste and then pour over salad.
  3. Enjoy!!
